There are many great restaurants in the Vail Valley and I had the opportunity to try one of Vail’s newest restaurants, “Flame”. Located in the Four Seasons Resort Vail, “Flame” is an upscale contemporary mountain steakhouse. For starters, the French Onion Soup and heirloom tomato salad with candied kumquats, basil pesto with aged balsamic, champagen vinaigrette are excellent. For the main course the 12 oz dry-aged bison ribeye melts in your mouth especially with one of the six sauces which are house made and the Ricotta Stuffed Bison Meatballs are one of the house specialities. Don’t forget to order sides. One of the standouts was the white cheddar and jalapeno Mac and Cheese. “Out of Bounds” is the private dining room which features a large fireplace and a huge wine rack.
