FALL LINE | VAIL VILLAGE

Located on Bridge Street, Fall Line Kitchen & Cocktails offers fresh, contemporary cuisine with worldwide inspiration. Our retro 60’s “apres” inspired decor is accented with large format Slim Aarons photographs and is perfect for a cocktail, a bottle of wine, and the most delicious meal in Vail. 

SPLENDIDO | BEAVER CREEK

An evening at Splendido offers exquisite service and inspired dining, and it’s impossible to ignore that it all takes place within an idyllic chateau beside Beaver Creek mountain. This fine dining restaurant has a dream setting for that once-in-a-lifetime experience, yet people continue to return time after time for the Splendido they know and love.

MIRABELLE | BEAVER CREEK

Mirabelle is a boutique restaurant located in the Vail Valley and believe to be the first home site in Beaver Creek. It’s unique and romantic setting is the home of Belgium Master Chef Daniel Joly. His unique and contemporary cuisine uses the best natural and organic ingredients available, most from its own garden and green house on site. Chef Joly takes great pride in his work but if you ask him what gives him the most satisfaction of all his awards and accomplishments, he will simply say that awards and peer recognition are great but a customer complimenting him for a great dining experience is the best of all.

MOUNTAIN STANDARD | VAIL VILLAGE

From the creators of Sweet Basil in Vail Colorado comes a fresh, innovative new restaurant opening December 2012. Aptly named Mountain Standard, this rustic and relaxed tavern aims to set a new standard in the Vail valley by using an ancient form of cooking.

The majority of Mountain Standard’s menu will be prepared via the most primal cooking method: over an open and live wood fire. The only restaurant in the valley to devote themselves to this age-old way of cooking, the food at this exciting new restaurant will have rustic, bold and honest flavors, focusing on the purest ingredients in the Rocky Mountain region and beyond.

VIN48 | AVON

VIN48 offers an ever-changing rustic American menu to satisfy discriminating palates with small and large plates featuring local organic ingredients and one of the most gluten-free friendly restaurants in the valley.

Chef McCaw’s food is complemented by our eclectic, carefully chosen wine list. An Enomatic preservation system allows us to present over 40 wines by the glass and half glass. We also serve hand-crafted cocktails and beer from our full bar.

MOTSUHISA | VAIL VILLAGE

Chef Nobu Matsuhisa’s second Colorado location opened in 2011 in the heart of Vail Village. Located in the 5-Star Solaris development, Matsuhisa Vail is a rustic urban setting complete with a stone fireplace, outdoor fire pits, large indigenous stone pillars and walls, and custom woodwork. Floor to ceiling windows reveal a panoramic view of Vail Mountain. Seasonally, the front of the restaurant opens up into an expansive outdoor patio.

WILD SAGE | EAGLE

From the guys over at Drunken Goat in Edwards, we bring you our new sister restaurant, Wild Sage! Wild Sage is a casual, family-friendly restaurant with something for everyone on our varied but plant-forward menu. We offer everything from burgers to Buddha bowls. Serving lunch, dinner, and Sunday brunch with warm Colorado hospitality.

CRAFTSMAND | EDWARDS

When Chris Schmidt left his position as executive chef at Vail’s Sweet Basil in 2017, he was burned out on fine dining but not cooking itself. Within a matter of months, he and his wife Janelle, also an industry vet, opened Craftsman, a souped-up sandwich shop in nearby Edwards. Craftsman Sandwich and Tap focuses on chef inspired sandwiches, small plates and snacks with a constantly rotating craft beer draft list from Colorado and beyond.
